ORANGE CAKE
2 large oranges
100gm almond meal
1 cup sugar
6 eggs
1 teaspoon baking powder
1 teaspoon vanilla
Boil the whole oranges in water in a covered saucepan for 1 hour. Remove from the water & cool.
Cut into chunks, remove centre pith & process in blender or with stick blender until "mashed".
Add eggs 1 at a time & blend
Add sugar, almond meal, baking powder & vanilla & blend until just combined.
Pour mixture into a greased 18 inch spring form pan (base lined with baking paper), stand pan on a biscuit or baking tray.
Cook in mid oven at 180
°C or 170°C fan forced (375° or 350° fan forced) until a skewer comes out clean, around 30 minutes.
Serve with cream & berries or for a more decadent Christmassy flavour, add whisky soaked
orange segments & whisky & honey flavored whipped cream.
Freezes well.
