Lemony Brown Rice and Lentil Salad

So I wanted to make a vegetarian salad to bring along to a small gathering of people - not everyone was a vegetarian though so it had to be really tasty!
To add to this my friend had some other dietary issues just to add some other complications - no dairy, no eggs, no gluten and no vinegar....quite a list!

In Memorium: Henry Kielich

10 days ago we said our farewells to our dear friend, Weisa. Today we have said our farewells to her brother Henry. It seems hardly possible that he has also gone from our lives so unexpectedly.
On our return journey from Weisa's funeral we stopped to see her brother, Henry, in hospital.  He was admitted the day before his sister died. The person we had known all our lives was not the same one that lay on that hospital bed. His spirit had already gone it seems, gone with his much loved sister....

Our dearest friend has gone from our lives and become a cherished memory.

She gave her all and more, loved her family and friends without reservation.

We shake our fists in anger, we wipe our tears from our cheeks, we drop our head in resignation.

Friday the 17th ended as a sad day.  Our friend for close to 35 years was no longer with us.

Our friendship began somewhere around 1980. Orange Cake

ORANGE CAKE






2 large oranges
100gm almond meal
1 cup sugar
6 eggs
1 teaspoon baking powder
1 teaspoon vanilla

Boil the whole oranges in water in a covered saucepan  for 1 hour. Remove from the water & cool.
Cut into chunks, remove centre pith & process in blender or with stick blender until "mashed".
Add eggs 1 at a time & blend
Add sugar, almond meal, baking powder & vanilla & blend until just combined.

"Tunczyk" Salad (Tuna Salad)

This recipe comes from Katarzyna our young Polish cousin.  So the actually quantites are typically Polish - a bit of this a bit of that, a glass of something else...


Ingredients:

1 large can of Tuna in springwater
3 or 4 hard boiled eggs
grated cheese - a couple of large handfulls (gouda/ cheddar... whatever you like)
1 finely chopped medium onion
jar of the best mayonnaise - you will use probably 3/4 of jar - I use Hellmans, it's one of the best
salt, pepper.

“Kopytka   (Polish dumpling)

Serve on their own with mushroom or tomato sauce or with onion/bacon topping

Serve as a side with meat or chicken with sauce.

Can be served sweet with a sprinkle of sugar and a little cream

 

I like mine fried with a little butter or with breadcrumbs done in butter on a frypan.

For days at a time I don't turn on the radio. Why? I can't listen to the hype and tripe of the world gone insane.  I leave it silent, I look out through my windows at the long grass blowing in the wind, the blue sky scattered with soft clouds, the snow gums bending and shaking their leafy heads. We have some incredibly severe weather down here in the Alpine regions of NSW.  Last night was no exception. Top of Thredbo recorded winds in excess of 120kmh. 
I'm pretty sure it was the same here. It's really great having roof windows. They let the heat trapped under the ceiling out and allow air to circulate. Just one unexpected problem... birds!  Now, I knew that come the warmer weather there would be an issue with flies coming in as we don't have fly screens fitted (yet!).  Mosquitoes aren't a problem for the moment.  But birds!  Never thought of that one.

The storms we have had of late are crazy - just look at the clouds - pretty amazing..the resulting hailstorms have taken many by suprise!



Autumn is on its way! Yes, I've seen some oaks already showing scarlet leaves. On Building a Shed

The Shed

Finally we are building the shed! Slab was poured a while ago.  It is a daunting task. A 12x12m shed – can you imagine the span of the rafters? It’s all in steel too. A very good friend (not mentioning any names, Rob!!) has offered to come down and bring lots of tools and his engineering brain with him – could be interesting – two engineers from two different disciplines agreeing on what to do and how to do it!

First World Problems...

Well here we are at Sally Supreme and over the last few days there seem to have been an endless list of problems which has made the stay frustratingly uncomfortable.

Ferocious winds down in the Southern Alps region are not uncommon - but couldn't they have waited until the concrete had been poured???? really!

Our shed has been put off time and time again - finally last week the concreter came (from Cooma - I'd highly recommend him to Jindabynites...)  got everything in place on Saturday for a Monday early morning concrete pour.....arrghhhh!

Well, our gyprockers from Canberra have done a marvellous job. Unfortunately for us their final week and a bit has fallen smack bang in the middle of school holidays and a couple of dumps of much needed real snow!
I've found accommodation in various places - but of course the rates have all doubled and tripled because 'the snow has fallen'...! sheesh!
Thank goodness these guys are down to earth and are not really worried about where they lay their heads just so long as it's not under the stars ...

Insulation Madness

What an enormous job - I take  my hat off to Charles getting up on that shaky scaffold and doing the roof insulation!
Krystin has also climbed up there and has done the high walls and some ceiling insulation too, plus lots of walls.
Definitely not something I would have been comfortable doing.
Our insulation is R4.1 plus we have R1.5 sarking... total of R5.6.... let it snow, we won't mind!

The first frosts have arrived

There have been some very cold mornings and we were just waiting for the first 'real' frost of the season and we weren't disappointed. The early morning sunrays bedazzled the icy layer sending multi coloured sparkles this way and that!  The downside was the frozen water pipes! We had forgotten to disconnect and drain the water before we went to bed... luckily we have repaced most of those now with hoses that have some room to expand and contract unlike the old copper pipes - still - it did me...

This is a past event now - thank goodness!  Back in January after the New Year we returned to the house for the weekend to do some work before the builders started in earnest.  All I can say is that when we arrived and saw the state of the house I literally cried! It took all four of us the entire weekend to attempt to clean up the disaster.

Now, you ask, why would there be a mob of sheep in the house?   Good question!

The marks on the roof are a manufacturing problem. We have been waiting a very long time for the builders to sort this one out but the way it works is that the manufacturers will replace the roof but we have to put it up (i.e. we have to PAY someone to replace it...) sigh! think it will be cheaper to have it spray painted!   Any takers?

Well the garage is finished on the outside now and work has started on the house.
windows and door frames are in. We are waiting on the glazier to fit the fixed glass panels in the top of the
very large window/door frames at front of house.
Boards have been put up on 2 external walls and eaves as well.  With the inclement weather the builders are
doing quite a bit of carpentry work inside - our walk-in wardrobe, the stairs to the mezzanine, blocking under front veranda for the eaves and some work...

Well, this house has been in mothballs for quite some time now.

It's definitely autumn, lots of trees changing colour and loads of rain - unfortunately we are still waiting for the delivery of our 130,000 ltr rain tank!

15th August : In Memory of my wonderful Mum

Well it's mum's birthday today. She passed away on th 13th of August, 1998.  My theory was that she really didn't want to get old... she would have been 70.
Mum was always full of life. She always looked wonderful - makeup and hair beautifully done - she loved to laugh and dance and have a good time. She loved her friends dearly and was always the designated driver (because no one else had a drivers licence!).

Beautiful Autumn weather

Perfect weather recently, not too hot and not too cold, sunny and a light breeze, blue blue sky with white fluffy clouds. Perfect day to do a circuit around the Southern Highlands from Glenquarry to Bundanoon for a brunch of scrambled eggs with smoked salmon at Ye Olde Bicycle Shoppe.  Then continue the drive back towards Fitzroy falls and Wildes Meadow and up Tourist Road which has the most beautiful creamy white trunk Eucalypts.

Fantastic - finally some rain ! We really need it - the paddocks were turning to dust and the front 'lawn' was browning off.

I know winter is finished (no matter what the weather is doing....wild winds at the moment).  My casual winter job down in Jindy has come to an end for another year - but the ski season has been extended by a week - l'd love to do some spring skiing - what are the chances??

Still, as the temperatures warm up people will be heading for the beach and then the snow covered mountains will only be a dream for the die-hards!   (and those who live down in the alpine regions)

Another grey day

The weather suits our moods. J is particulary down today - didn't help that I was cross at being left outside for over half and hour waiting for him to open the door - again!  Then we were kept waiting for an hour at the hospital as they didn't have a vacant bed for Justin's appointment with the big drip! Not the best of days but there is not much to be done really.

Bad news

It seems that good news and happy times have deserted us.

Two weeks ago we started out on a bit of R&R - a trip to Melbourne to spend with Justin on his 22nd birthday.

Several weeks earier Justin came to Bowral with a few complaints - itchyness, severe night time sweating, a lump on his neck and reflux.  He'd been to several doctors whilst in Melbourne and was given various medications to help the individual symptoms .

Southern NSW regional Interschools competitions took place this week. Competitions were held at Blue Cow and Guthega.
We were just fantastically lucky to have brilliant weather, sunshine and great snow, what more could you ask for.

It seems that winter started early and we didn't get a couple of weeks of 'indian summer' either. The snow keeps falling, fabulous for our ski resorts after some very poor seasons. Each day I listen in amazement to the previous nights temperatures up in the mountains. Last night it was -12 C  at Charlott's Pass! Brrrrrrr, who said it never gets cold in Australia.....
By now most of us are craving a bit of natural warmth, alas the ground is crunchy every morning.

Plastering has begun...yay!

Finally the house is taking shape inside. It's been a drama tring to find trades people in downtown Jindabyne and areas close by.  With the approaching opening of the ski season, actually, this weekend now... the lodges have been trying to get all their remodelling, renovating and new work finished. What that means is that this is the busiest time of year for all trades. As soon as that snow falls in earnest work up on the mountains will be done for the season. Then, of course, these workers will be taking some well deserved time off. None of this is of any use to us mere mortals...

We have finally found some gyprockers  in Canberra and they seem to be good workers and have many years experience.  We have our fingers crossed!

Today the temperatures plummeted - cloudy, cool - very cool and damp - must have been a few snowflakes up on the high peaks for sure.

We had some visitors - Rob & Sandra came for a drive with Bella and took a tour of the house and gave us a great reason to take time off - great guests who brought lunch and some great wine - thank you!

Back in the warmth of our home away from Sally Supreme we have the fire going, the doggies fed and can hopefully relax for a while in front of the tele (thank you Cathy & Angus!)

1st row: the plumbers needed to flush out the drains and test their plumbing...so down to the dam to fill up the cube, Charles decided to wash the car too - at least he managed to clean off some of the mud on one side! lol. 

Now there's a problem - flat tyre on the trailer when it's got a full load of water on board, lucky the hydraulic jack was in the garage :) (not so lucky for Justin when he had a flat tyre at home and Kk had to change it and found the jack was bu**ered!
